* 1 16-oz. can pinto beans, drained
* 1/3 c. chicken broth
* 2 slices bacon, diced
* 1 Tbsp. adobo sauce, (from canned chipotle chiles)
* optional: 2 green onions, sliced
In small saucepan, heat chicken broth with diced bacon gently to render some of the bacon fat, about 5 min. Stir in pinto beans and adobo sauce, if using, and heat through gently about 10 min. Garnish with green onions to serve.
* Bacon makes any dish better. Goes well with Fast-off-the-Grill Chorizo Quesadillas or Mango Pork Fajitas with Chipotle Sour Cream.
