* 1 to 1 1/2 lb. seafood steaks, such as salmon or halibut
* 1/2 c. vegetable oil
* 2 tsp. grated lime zest, juice of two limes
* 2 Tbsp. honey
* 2 Tbsp. fresh chopped cilantro OR 2 tsp. dried cilantro
* 1 Tbsp. fresh grated ginger OR 1 tsp. dried ginger
* 1 tsp. salt, 1/2 tsp. pepper
* 1 each red and green bell peppers, cut into 1 1/2" squares
* 12 large mushrooms
* 1 medium onion, cut in 1 1/2" chunks
* 1 zucchini, cut in 1/2" slices
1. Cut seafood into 1 1/2-in. squares.
2. Blend together oil, lime zest, lime juice, honey, cilantro, ginger, salt and pepper. Divide marinade, reserving 1/4 c. for basting. Marinate seafood cubes in remaining mixture for 30 minutes, turning occasionally.
3. Preheat grill/coals to medium-high heat. Skewer seafood and vegetables alternately on skewers. Place on a well oiled grill and cook about 5 minutes per side, basting vegetables with reserved marinade. Do not overcook.
