* 1 lb. large Florida shrimp, peeled and deveined
* 1 oz. blue cheese
* 1/4 c. butter, softened
* 2 Tbsp. fresh lime juice
* 1/2 tsp. Worcestershire sauce
* 1/4 tsp. salt
* 1/4 tsp. pepper
* 1/8 tsp. hot pepper sauce
* 1 Tbsp. parsley, chopped
* paprika
1. Butterfly shrimp by cutting lengthwise along the back -- don't cut all the way through. Spread shrimp open to look like a butterfly.
2. Place shrimp on a well greased baking sheet with cut side up. Combine remaining ingredients except Florida parsley and paprika. Blend well.
3. Stir in Florida parsley. Place approximately 1 tsp. of cheese mixture on top of each Florida shrimp. Sprinkle with paprika. Bake in a preheated 325°F oven for 7 to 10 min. or until shrimp are no longer translucent in the center.
