Ham Salad with Hot Peanut Dressing

Ingredients
3/4 lb. boneless ham, sliced into 1/2-in. strips
2 Tbsp. vegetable oil
1/4 c. peanut butter
3 Tbsp. lime juice
1Tbsp. reduced-sodium soy sauce
1 tsp. ground ginger
1 garlic clove, crushed
1 Tbsp. sugar
1 medium cucumber, seeded and thinly sliced
1/2 red onion, thinly sliced
6 c. Romaine, torn (or use bagged salad)
1 (11oz.) can mandarin oranges, drained
roasted peanuts (optional)

Directions:

1. In medium saucepan combine oil, peanut butter, lime juice, soy sauce, ginger, garlic and sugar. Over low heat stir to dissolve sugar and heat through.

2. In large bowl toss together cucumber, onion,and Romaine. Line plates with salad mix, ham and orange sections. Drizzle with dressing. Sprinkle with roasted peanuts, if desired.
