Stir-Fried Cajun Pork

Ingredients
1 lb. boneless pork loin, cut into julienne strips
4 Tbsp. Cajun-style seasoning (purchased or see below)
1 tsp. vegetable oil
1 red bell pepper, diced
1 tart green apple, cored and diced
1/4 c. pecan pieces

Directions:

1. Season pork strips with 2 Tbsp. Cajun seasoning. Toss remaining ingredients (except oil) with 2 Tbsp. seasoning, reserve.

2. Heat oil in nonstick skillet over medium-high heat. Stir-fry pork 2 min.; add reserved mixture, cook and stir 2 min. more. Serve immediately.

CAJUN-STYLE SEASONING: Mix together well 3 Tbsp. paprika, 1/2 tsp. cayenne pepper, 1 Tbsp. garlic powder, 2 tsp. oregano, 2 tsp. thyme, 1/2 tsp. salt, 1/2 tsp. white pepper, 1/2 tsp. cumin, 1/4 tsp. nutmeg. Store in air tight container. Makes 1/2 c.
