Sweet and Sour Beef with Cashews

Ingredients
Sauce mixture:
1 Tbsp. soy flour, or cornstarch
1/3 c. water
sugar substitute equal to 1 Tbsp sugar
1/8 c. cider vinegar
3 Tbsp. low-sodium soy sauce
3 Tbsp. tomato sauce

Meat mixture:
1 Tbsp. soy flour, or cornstarch
1 Tbsp. sherry or red wine
1 (12-oz.) lean beef tenderloin, trimmed and cut into small, thin pieces

Frying ingredients:
1 Tbsp. peanut oil
1 med. onion, peeled and sliced
1/4 c. scallions, chopped
1 lg. clove garlic, peeled and minced
2 tsp. fresh ginger, peeled and minced
1/2 lb. snow peas, ends trimmed
1/3 c. unsalted, dry-roasted cashews, coarsely chopped

Directions:

For sauce mixture:

1. Combine 1 Tbsp. of cornstarch (or soy flour) with water, sugar substitute, vinegar, soy sauce and tomato sauce. Stir with a whisk and set aside.

For meat mixture:

2. Combine 1 Tbsp. cornstarch (or soy flour with sherry or wine and beef, mixing well. Set it aside.

3. Heat peanut oil in a wok or large nonstick skillet over medium-high heat. Brown onions and scallions.

4. Add garlic and ginger. Stir until this mixture starts to turn golden.

4. Add beef mixture and continue stir-frying for 3 min.

5. Add sauce mixture and stir-fry for an additional minute.

6. Add snow peas and *pineapple and continue stir-frying for 3 min. or until snow peas are tender-crisp.

7. Top with cashews, stir and serve.

Serving size: 5 1/3 oz.

* Variation: Those who are not concerned with the carb count of this recipe can add to the wok a 4-oz. can of pineapple chunks in natural juice, drained, together with the snow peas.

Note: In Chinese cooking, It is best to have all your ingredients prepared and ready before starting to stir-fry.
