Thai Turkey Roll-Up

Ingredients
Peanut Sauce:
1 large lime, zested and juiced
2 Tbsp. green onion, minced
2 Tbsp. crunchy peanut butter
1 tsp. fresh ginger root, peeled and minced
1 tsp. fresh garlic, minced
1/4 tsp. red pepper flakes
2 Tbsp. low sodium soy sauce
1 Tbsp. cilantro, minced
2 tsp. light brown sugar
Assembly:
4 (8 inch) whole wheat tortillas, high protein
1 lb. oven roasted turkey breast, sliced thin
2 oz. red onion, sliced thin
2 oz. lettuce, washed, drained, chilled and shredded
4 tsp. cilantro, washed,drained and chilled

Directions:

1. In a medium bowl, combine lime juice and zest, soy sauce, onions, cilantro, peanut butter, sugar, ginger root, garlic and pepper flakes. Stir well.

2. Spread each tortilla with Peanut Sauce.

3. Layer each with 4 oz. sliced turkey. Evenly sprinkle each with 1 Tbsp. onion, 1 Tbsp. lettuce and 1 tsp. cilantro.

4. Roll up tightly and cut on the diagonal. Serve chilled.
