Green Monster Dip

Courtesy of Walnut Marketing Board 10 Servings • Serve as dip with carrot, celery or jicama sticks, broccoli or homemade crackers.
Ingredients
1 c. fresh or frozen edamame (soybeans)
3/4 c. California walnuts
1/2 c. lightly packed parsley
1/4 c. plain yogurt
1 small clove garlic, pressed
1/4 tsp. salt

Directions:

1. If using frozen edamame, rinse under warm water until thawed.

2. Place edamame, walnuts, parsley, yogurt, garlic and salt in food processor. Whirl until smooth. You can safely store this dip in a covered container in the refrigerator for up to 3 days.

Tips:

* This bright green dip is great as a dip or spread. Kids can have fun dipping their favorite colorful vegetable into this. Try carrot sticks, bright red, yellow or orange bell peppers, cherry tomatoes, jicama strips or zucchini coins.

* Spread on lavash bread (flatbread) or tortilla. Top with fresh spinach, shredded carrots, feta cheese, and avocado; roll up and slice into 1-inch rounds.
