Shrimp and Tunisian Tomato Relish

1 1/4 lb. shelled and deveined shrimp |
2 Tbsp. olive oil, divided |
3/4 tsp. salt, divided |
1/2 tsp. ground red pepper, divided |
2 large green or yellow peppers, diced |
1/2 c. green onions, sliced |
2 tsp. garlic, finely chopped |
2 tsp. ground cumin |
1 1/2 lb. fully ripened fresh Florida tomatoes, diced (about 4 c.) |
chopped fresh parsley (optional) |
Directions:
1. In a bowl, toss shrimp with 1 Tbsp. oil, 1/4 tsp. salt and 1/4 tsp. ground red pepper; set aside.
2. In a large skillet, heat remaining 1 Tbsp. oil over medium-high heat. Add bell peppers, green onions, garlic, cumin and the remaining 1/2 tsp. salt and 1/4 tsp. ground red pepper. Cook and stir until vegetables are just tender, about 5 min.
3. Stir in tomatoes; cook just until tomatoes are hot, 3 to 5 min. longer; transfer to a platter.
4. Add marinated shrimp to skillet; cook and stir until pink, about 2 min. Arrange shrimp on top of Tunisian Fresh Tomato Relish. Sprinkle with chopped fresh parsley, if desired. Serve hot or at room temperature.
