Herb-Crusted Lamb Cutlets

4 x 3 french-trimmed Australian lamb cutlet racks |
1/4 c. fresh wholewheat breadcrumbs |
1 Tbsp. fresh rosemary, finely chopped |
1 Tbsp. fresh flat-leaf parsley, finely chopped |
2 tsp. fresh thyme, finely chopped |
3 cloves garlic, crushed |
3 tsp. pesto |
Directions:
1. Preheat oven to 400°F. Combine breadcrumbs, herbs, garlic and pesto in a bowl.
2. Press breadcrumb mixture into lamb racks.
3. Place lamb in shallow baking dish and roast uncovered for approx. 20-25 min. or until meat thermometer inserted into center of lamb registers 135°F for medium rare.
4. Let lamb stand 5 min. before cutting racks into cutlets.
