Florida Blue Crab Fritters

1 lb. Florida blue crab lump meat |
1/2 c. self-rising corn meal |
1/2 c. self-rising flour |
1 tsp. baking powder |
1 clove Florida garlic, minced |
1/2 medium Florida onion, minced |
1/4 c. fresh Florida parsley, minced |
1 tsp. hot sauce |
1/2 tsp. seafood seasoning |
salt and pepper to taste |
1/2 c. buttermilk |
1 egg |
canola oil for frying |
Directions:
1. In a large bowl, stir together the dry ingredients; add the milk and egg mixing until smooth. Fold in the crab.
2. Heat the oil in a heavy saucepan or deep fryer to 375°F. Drop tablespoonfuls of the batter into the hot oil. Fry 2 to 3 min. until golden brown, turning once if needed. Drain on paper towels. Serve hot.
