Two Melon Shake

3 c. roughly chopped seedless watermelon |
1/2 c. cubed raw bitter melon (seeds and fibrous core removed) |
1/2 c. coconut milk |
4 ice cubes |
pinch of salt |
Directions:
1. In a blender, on high speed, puree watermelon, bitter melon, coconut milk, ice cubes and salt until smooth. Pour into two glasses and serve immediately.
Tip: If you can't find bitter melon, substitute it with an equal amount of chopped cucumber. To sweeten, add a drizzle of honey.
